Custom liqueurs and contract distilling

Greenbach actually started because I wanted to make the cocktails at Jimmy Slings events better.

Being based in the Sutherland Shire, we all know one cocktail that everyone orders, the Apple Martini.

We were making a lot of them, but I knew I could make it better.

I wanted a sour apple liqueur that actually tasted good. Something crisp, properly sour and more versatile behind the bar.

So I started working on my own.

What was originally supposed to be an ingredient to make our Apple Martinis better slowly turned into something much bigger.

After plenty of testing, tweaking and probably drinking more Apple Martinis than was necessary, Greenbach Sour Apple Liqueur was born.

What started behind the Jimmy Slings bar is now its own alcohol brand, with bottles going into bars, pubs, restaurants and bottle shops.

And somewhere along the way, we realised we'd learnt a hell of a lot about taking an idea from “this would taste good” to an actual product in a bottle.

That's where this side of Jimmy Slings came from.
